Growth of the pathogen Listeria monocytogenes on chicken nuggets

Experiments studying the growth of the pathogen Listeria monocytogenes on chicken breast fillets as a function of storage temperature are in progress in the Laboratory of Food Microbiology and Biotechnology (AUA). The final aim of the study is the use of microbiological data to develop mathematical models to predict the growth of the specific pathogen in related chicken products as a funtion of storage temperature
